Mexican Style Pasta Bake

Ingredients:

  • 500 grams Penne pasta
  • 500 grams Ground beef
  • 2 units Red bell peppers
  • 1 unit Onion
  • 250 grams Grated Mexican cheese blend
  • 1 packet Taco seasoning
  • 1 jar Large jar of salsa
  • 2 tablespoons Olive oil

Instructions:

  1. Preheat your oven to 375F (190C).
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  3. While your pasta is cooking, heat the olive oil in a skillet over medium-high heat. Add ground beef, breaking it up as it cooks. Add onions and bell peppers, cook until vegetables are tender and beef is fully cooked.
  4. Stir in the taco seasoning and salsa, reduce the heat to low and let it simmer for 5 minutes.
  5. In a large baking dish, combine the pasta and beef mixture. Stir well to combine, then top with the grated cheese.
  6. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  7. Allow to cool for a few minutes before serving. Enjoy this comforting Mexican style pasta bake!
