
Mexican Style Pasta Bake

Ingredients:
- 500 grams Penne pasta
- 500 grams Ground beef
- 2 units Red bell peppers
- 1 unit Onion
- 250 grams Grated Mexican cheese blend
- 1 packet Taco seasoning
- 1 jar Large jar of salsa
- 2 tablespoons Olive oil
Instructions:
- Preheat your oven to 375F (190C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
- While your pasta is cooking, heat the olive oil in a skillet over medium-high heat. Add ground beef, breaking it up as it cooks. Add onions and bell peppers, cook until vegetables are tender and beef is fully cooked.
- Stir in the taco seasoning and salsa, reduce the heat to low and let it simmer for 5 minutes.
- In a large baking dish, combine the pasta and beef mixture. Stir well to combine, then top with the grated cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Allow to cool for a few minutes before serving. Enjoy this comforting Mexican style pasta bake!
