Mexican Style Healthy Scrambled Eggs

Ingredients:

  • 8 whole Eggs
  • 2 tablespoons Olive oil
  • 1 medium-sized, diced Onion
  • 2 diced Bell peppers
  • 2 medium-sized, diced Tomatoes
  • 1 cup, drained and rinsed Black beans
  • 1/2 cup Low-fat shredded cheese
  • 1 large, diced Avocado
  • 1/2 cup, finely chopped Cilantro
  • to taste Salt
  • to taste Pepper

Instructions:

  1. In a large non-stick skillet, heat the olive oil over medium heat.
  2. Add the diced onion and bell peppers to the skillet and sauté until they are tender.
  3. While the onions and bell peppers are cooking, beat the eggs in a bowl.
  4. Once the onions and peppers are tender, add the beaten eggs to the skillet. Stir gently until the eggs begin to cook.
  5. When the eggs start to solidify, add the diced tomatoes and black beans. Stir gently until well combined.
  6. Sprinkle the low-fat shredded cheese on top of the egg mixture and allow it to melt.
  7. Season the scrambled eggs with salt and pepper to taste.
  8. Just before serving, top the scrambled eggs with diced avocado and freshly chopped cilantro. Serve hot and enjoy this healthy and delicious Mexican Style Scrambled Eggs!
