
Mexican Style Healthy Scrambled Eggs

Ingredients:
- 8 whole Eggs
- 2 tablespoons Olive oil
- 1 medium-sized, diced Onion
- 2 diced Bell peppers
- 2 medium-sized, diced Tomatoes
- 1 cup, drained and rinsed Black beans
- 1/2 cup Low-fat shredded cheese
- 1 large, diced Avocado
- 1/2 cup, finely chopped Cilantro
- to taste Salt
- to taste Pepper
Instructions:
- In a large non-stick skillet, heat the olive oil over medium heat.
- Add the diced onion and bell peppers to the skillet and sauté until they are tender.
- While the onions and bell peppers are cooking, beat the eggs in a bowl.
- Once the onions and peppers are tender, add the beaten eggs to the skillet. Stir gently until the eggs begin to cook.
- When the eggs start to solidify, add the diced tomatoes and black beans. Stir gently until well combined.
- Sprinkle the low-fat shredded cheese on top of the egg mixture and allow it to melt.
- Season the scrambled eggs with salt and pepper to taste.
- Just before serving, top the scrambled eggs with diced avocado and freshly chopped cilantro. Serve hot and enjoy this healthy and delicious Mexican Style Scrambled Eggs!
