Mexican-Style Healthy Pasta for Midnight Cravings

Ingredients:

  • 2 cups Whole Wheat Pasta
  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 medium size Onion
  • 1 medium size Red Bell Pepper
  • 1 cup Cooked Black Beans
  • 1 cup Corn Kernels
  • 1 cup Diced Tomatoes
  • 1 tsp Cumin Powder
  • 1 tsp Chili Powder
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Chopped Fresh Cilantro
  • 1 tbsp Lime Juice

Instructions:

  1. Boil the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add garlic and onion, cook until translucent.
  3. Add red bell pepper to the pan, sauté until soft.
  4. Add black beans, corn, and diced tomatoes to the pan. Stir to combine.
  5. Season with cumin, chili powder, salt, and black pepper. Mix well.
  6. Add the cooked pasta to the pan. Stir until well combined with the vegetable mixture.
  7. Finish with a squeeze of lime juice and a sprinkle of fresh cilantro.
  8. Serve hot and enjoy your healthy and delicious midnight Mexican-style pasta.
