
Mexican-Style Healthy Pasta for Midnight Cravings

Ingredients:
- 2 cups Whole Wheat Pasta
- 2 tbsp Olive Oil
- 2 cloves Garlic
- 1 medium size Onion
- 1 medium size Red Bell Pepper
- 1 cup Cooked Black Beans
- 1 cup Corn Kernels
- 1 cup Diced Tomatoes
- 1 tsp Cumin Powder
- 1 tsp Chili Powder
- to taste Salt
- to taste Black Pepper
- 2 tbsp Chopped Fresh Cilantro
- 1 tbsp Lime Juice
Instructions:
- Boil the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add garlic and onion, cook until translucent.
- Add red bell pepper to the pan, sauté until soft.
- Add black beans, corn, and diced tomatoes to the pan. Stir to combine.
- Season with cumin, chili powder, salt, and black pepper. Mix well.
- Add the cooked pasta to the pan. Stir until well combined with the vegetable mixture.
- Finish with a squeeze of lime juice and a sprinkle of fresh cilantro.
- Serve hot and enjoy your healthy and delicious midnight Mexican-style pasta.
