
Mexican Style Healthy Pasta

Ingredients:
- 400 grams Whole Wheat Spaghetti
- 2 tablespoons Olive Oil
- 3 cloves Garlic
- 1 whole Red Bell Pepper
- 4 medium sized Tomatoes
- 1 cup Black Beans
- 1 cup Sweet Corn
- 1 bunch Cilantro
- 1 whole Lime
- 2 medium sized Avocado
- to taste Salt and pepper
Instructions:
- Boil the pasta with a pinch of salt till it is al dente, then drain and keep aside.
- In a pan, heat the olive oil and sauté finely chopped garlic till it is golden brown.
- Add chopped red bell pepper and sauté till it is tender.
- Add chopped tomatoes, black beans and sweet corn. Cook till tomatoes are tender.
- Add the cooked pasta to this mix. Stir well so that the pasta is well coated with the veggies.
- Season with salt and pepper. Squeeze lime juice over it for a tangy flavor.
- Garnish with chopped cilantro and slices of avocado before serving.
