Mexican Style Healthy Pasta

Ingredients:

  • 400 grams Whole Wheat Spaghetti
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic
  • 1 whole Red Bell Pepper
  • 4 medium sized Tomatoes
  • 1 cup Black Beans
  • 1 cup Sweet Corn
  • 1 bunch Cilantro
  • 1 whole Lime
  • 2 medium sized Avocado
  • to taste Salt and pepper

Instructions:

  1. Boil the pasta with a pinch of salt till it is al dente, then drain and keep aside.
  2. In a pan, heat the olive oil and sauté finely chopped garlic till it is golden brown.
  3. Add chopped red bell pepper and sauté till it is tender.
  4. Add chopped tomatoes, black beans and sweet corn. Cook till tomatoes are tender.
  5. Add the cooked pasta to this mix. Stir well so that the pasta is well coated with the veggies.
  6. Season with salt and pepper. Squeeze lime juice over it for a tangy flavor.
  7. Garnish with chopped cilantro and slices of avocado before serving.
