Mexican Style Healthful Pasta

Ingredients:

  • 2 cups Whole wheat pasta
  • 2 tbsp Olive Oil
  • 1 medium (chopped) Onion
  • 2 cloves (minced) Garlic
  • 2 (chopped) Bell peppers
  • 2 (chopped) Fresh tomatoes
  • 1 15-ounce (rinsed) Can black beans
  • 1 tbsp Ground cumin
  • 1 tsp Chili powder
  • To taste Salt
  • To taste Ground black pepper
  • A handful (chopped) Fresh cilantro
  • 1 (sliced) Avocado

Instructions:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until it turns translucent.
  3. Add minced garlic and chopped bell peppers to the skillet, cooking until they are softened. Stir often to prevent burning.
  4. Add chopped tomatoes, black beans, cumin, chili powder, salt and black pepper into the skillet. Stir well and cook for 5-7 minutes until the flavors meld together.
  5. Add cooked pasta into the skillet and toss to combine with the veggies and beans. Cook for another couple of minutes.
  6. Garnish with fresh chopped cilantro and slices of avocado before serving.
