
Mexican Style Healthful Pasta

Ingredients:
- 2 cups Whole wheat pasta
- 2 tbsp Olive Oil
- 1 medium (chopped) Onion
- 2 cloves (minced) Garlic
- 2 (chopped) Bell peppers
- 2 (chopped) Fresh tomatoes
- 1 15-ounce (rinsed) Can black beans
- 1 tbsp Ground cumin
- 1 tsp Chili powder
- To taste Salt
- To taste Ground black pepper
- A handful (chopped) Fresh cilantro
- 1 (sliced) Avocado
Instructions:
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until it turns translucent.
- Add minced garlic and chopped bell peppers to the skillet, cooking until they are softened. Stir often to prevent burning.
- Add chopped tomatoes, black beans, cumin, chili powder, salt and black pepper into the skillet. Stir well and cook for 5-7 minutes until the flavors meld together.
- Add cooked pasta into the skillet and toss to combine with the veggies and beans. Cook for another couple of minutes.
- Garnish with fresh chopped cilantro and slices of avocado before serving.
