Mexican Style Exotic Pork Breakfast Tacos

Ingredients:

  • 1 lb Pork shoulder
  • 8 pieces Tortillas
  • 2 cloves Garlic cloves, minced
  • 1 piece Onion, chopped
  • 2 pieces Jalapeño, diced
  • 1 piece Habanero pepper, diced
  • 4 pieces Eggs
  • 1/4 cup Cilantro, chopped
  • 1 cup Mexican cheese, shredded
  • 2 pieces Lime
  • to taste Salt and pepper

Instructions:

  1. 1. Season the pork shoulder with salt and pepper. In a large skillet, cook the pork until it's no longer pink. Remove from the skillet and set aside.
  2. 2. In the same skillet, sauté onions, garlic, jalapeño, and habanero until they are soft and fragrant.
  3. 3. Add the cooked pork back into the skillet with the onions and peppers, and squeeze the juice of one lime over the mixture. Stir well to combine.
  4. 4. In a separate skillet, cook the eggs to your preference.
  5. 5. Warm the tortillas in a skillet or microwave.
  6. 6. Assemble your tacos: add the pork mixture on a tortilla, top with eggs, sprinkle with cheese and cilantro. Squeeze a bit of lime juice over the top.
