
Mexican Style Exotic Pork Breakfast Tacos

Ingredients:
- 1 lb Pork shoulder
- 8 pieces Tortillas
- 2 cloves Garlic cloves, minced
- 1 piece Onion, chopped
- 2 pieces Jalapeño, diced
- 1 piece Habanero pepper, diced
- 4 pieces Eggs
- 1/4 cup Cilantro, chopped
- 1 cup Mexican cheese, shredded
- 2 pieces Lime
- to taste Salt and pepper
Instructions:
- 1. Season the pork shoulder with salt and pepper. In a large skillet, cook the pork until it's no longer pink. Remove from the skillet and set aside.
- 2. In the same skillet, sauté onions, garlic, jalapeño, and habanero until they are soft and fragrant.
- 3. Add the cooked pork back into the skillet with the onions and peppers, and squeeze the juice of one lime over the mixture. Stir well to combine.
- 4. In a separate skillet, cook the eggs to your preference.
- 5. Warm the tortillas in a skillet or microwave.
- 6. Assemble your tacos: add the pork mixture on a tortilla, top with eggs, sprinkle with cheese and cilantro. Squeeze a bit of lime juice over the top.
