Mexican Style Comfort Shrimp Quesadilla

Ingredients:

  • 1 pound Large Shrimp
  • 2 cups Monterey Jack Cheese
  • 8 pieces Flour Tortillas
  • Chilli Powder to taste Salt
  • 1 piece Lime
  • 2 tablespoons Olive oil
  • 1 cup Sour Cream

Instructions:

  1. Peel and devein the shrimp.
  2. Heat 1 tablespoon of oil in a pan over medium heat. Add the shrimp and season with salt and chili powder. Cook until shrimp is pink, about 3-5 minutes. Remove shrimp from heat and squeeze fresh lime juice over top.
  3. In the same pan, lay out one tortilla. Sprinkle a portion of cheese and cooked shrimp over half of the tortilla. Fold it over to make a half-moon shape.
  4. Cook until cheese is melted and tortilla is toasted, about 3-4 minutes on each side.
  5. Repeat for remaining tortillas.
  6. Serve hot with sour cream on the side.
