
Mexican Style Comfort Shrimp Quesadilla

Ingredients:
- 1 pound Large Shrimp
- 2 cups Monterey Jack Cheese
- 8 pieces Flour Tortillas
- Chilli Powder to taste Salt
- 1 piece Lime
- 2 tablespoons Olive oil
- 1 cup Sour Cream
Instructions:
- Peel and devein the shrimp.
- Heat 1 tablespoon of oil in a pan over medium heat. Add the shrimp and season with salt and chili powder. Cook until shrimp is pink, about 3-5 minutes. Remove shrimp from heat and squeeze fresh lime juice over top.
- In the same pan, lay out one tortilla. Sprinkle a portion of cheese and cooked shrimp over half of the tortilla. Fold it over to make a half-moon shape.
- Cook until cheese is melted and tortilla is toasted, about 3-4 minutes on each side.
- Repeat for remaining tortillas.
- Serve hot with sour cream on the side.
