Mexican Street Corn (Elote)

Ingredients:

  • 4 ears Fresh Corn
  • 0.5 cup Mayonnaise
  • 1 juiced Fresh Lime
  • 2 tsp Ancho Chili Powder
  • 1 cup Grated Cotija Cheese
  • 2 tbsp Chopped Cilantro
  • To Taste Salt and Pepper

Instructions:

  1. 1. Preheat your grill on high for 5 minutes.
  2. 2. Place the corn on the grill and cook for about 15 minutes, turning occasionally until all sides are nicely charred.
  3. 3. While the corn is grilling, combine mayonnaise, lime juice, and chili powder in a bowl.
  4. 4. Once the corn is grilled, remove it from the grill and allow it to cool enough to handle.
  5. 5. Brush each ear of corn with the mayonnaise mixture.
  6. 6. Sprinkle the hot corn with cotija cheese, and finish with a sprinkle of cilantro.
  7. 7. Season with salt and pepper to taste.
  8. 8. Serve immediately for the freshest taste.
