
Mexican Street Corn (Elote)

Ingredients:
- 4 ears Fresh Corn
- 0.5 cup Mayonnaise
- 1 juiced Fresh Lime
- 2 tsp Ancho Chili Powder
- 1 cup Grated Cotija Cheese
- 2 tbsp Chopped Cilantro
- To Taste Salt and Pepper
Instructions:
- 1. Preheat your grill on high for 5 minutes.
- 2. Place the corn on the grill and cook for about 15 minutes, turning occasionally until all sides are nicely charred.
- 3. While the corn is grilling, combine mayonnaise, lime juice, and chili powder in a bowl.
- 4. Once the corn is grilled, remove it from the grill and allow it to cool enough to handle.
- 5. Brush each ear of corn with the mayonnaise mixture.
- 6. Sprinkle the hot corn with cotija cheese, and finish with a sprinkle of cilantro.
- 7. Season with salt and pepper to taste.
- 8. Serve immediately for the freshest taste.
