Mexican Spicy Pasta

Ingredients:

  • 2 cups Pasta
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 minced Garlic cloves
  • 1 diced Red bell pepper
  • 2 tablespoons Canned chipotle peppers in adobo sauce
  • 1 can Canned diced tomatoes
  • 1 cup Chicken broth
  • 1 cup Grated Parmesan cheese
  • to taste chopped Fresh cilantro
  • to taste teaspoon Salt
  • to taste teaspoon Pepper

Instructions:

  1. Heat the olive oil in a large skillet or pot over medium heat.
  2. Saute the onion, garlic, and bell pepper in the olive oil until they are soft.
  3. Add the canned chipotle peppers in adobo sauce, diced tomatoes, and chicken broth to the skillet. Stir to combine.
  4. Bring the mixture to a simmer. Then add the pasta, stirring it into the sauce until it is completely covered.
  5. Cover the skillet and let it simmer for about 20 minutes, or until the pasta is cooked to your liking.
  6. Once the pasta is cooked, stir in the Parmesan cheese until it melts completely into the sauce.
  7. Season the pasta with salt and pepper to taste, and sprinkle fresh cilantro over the top before serving.
