
Mexican Spicy Pasta

Ingredients:
- 2 cups Pasta
- 2 tablespoons Olive oil
- 1 large Onion
- 2 minced Garlic cloves
- 1 diced Red bell pepper
- 2 tablespoons Canned chipotle peppers in adobo sauce
- 1 can Canned diced tomatoes
- 1 cup Chicken broth
- 1 cup Grated Parmesan cheese
- to taste chopped Fresh cilantro
- to taste teaspoon Salt
- to taste teaspoon Pepper
Instructions:
- Heat the olive oil in a large skillet or pot over medium heat.
- Saute the onion, garlic, and bell pepper in the olive oil until they are soft.
- Add the canned chipotle peppers in adobo sauce, diced tomatoes, and chicken broth to the skillet. Stir to combine.
- Bring the mixture to a simmer. Then add the pasta, stirring it into the sauce until it is completely covered.
- Cover the skillet and let it simmer for about 20 minutes, or until the pasta is cooked to your liking.
- Once the pasta is cooked, stir in the Parmesan cheese until it melts completely into the sauce.
- Season the pasta with salt and pepper to taste, and sprinkle fresh cilantro over the top before serving.
