
Mexican Shrimp Breakfast Quesadilla

Ingredients:
- 1 pound shrimp
- 4 large flour tortillas
- 2 cups Mexican blend cheese
- 8 eggs
- 2 whole chipotle peppers in adobo sauce
- 1 large avocado
- 1 whole lime
- to taste salt and pepper
- 1 handful fresh cilantro
Instructions:
- Begin by peeling and deveining the shrimp. Season with salt and pepper. Cook in a hot skillet with a little oil until they are pink and opaque. Once cooked, remove from heat and set aside.
- In a separate pan, scramble the eggs to your desired level of doneness. Season with salt and pepper.
- Warm up each tortilla in a dry skillet for about 30 seconds on each side.
- Spread a layer of cheese on one half of each tortilla. Top the cheese with an even distribution of scrambled eggs, cooked shrimp, and diced chipotle peppers.
- Fold the tortilla over onto the filled half and press lightly to seal. Cook each quesadilla in a hot skillet, flipping gently once, until both sides are golden and crispy and the cheese is melted. This should take about 3-4 minutes per side.
- Serve your quesadillas with fresh sliced avocado, a squeeze of lime, and a sprinkling of cilantro for an exotic Mexican breakfast.
