
Mexican Quinoa Breakfast Bowl

Ingredients:
- 1 cup Quinoa
- 1 piece Avocado
- 1 cup Spinach
- 0.5 cup Black beans
- 1 piece Tomato
- 1 clove Garlic
- 1 tablespoon Cilantro
- 1 piece Lime
- 2 tablespoon Olive oil
- to taste Salt and pepper
Instructions:
- 1. Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool.
- 2. In a large bowl, mash the avocado. Add the spinach, black beans and diced tomato.
- 3. In a small bowl, combine the olive oil, the juice of the lime, minced garlic, and chopped cilantro. Season with salt and pepper.
- 4. Add the cooled quinoa to the bowl with the avocado, spinach and beans. Pour the dressing over the top and mix well.
- 5. Serve immediately, or refrigerate overnight for a healthy, delicious Mexican breakfast!
