Mexican Quinoa Breakfast Bowl

Ingredients:

  • 1 cup Quinoa
  • 1 piece Avocado
  • 1 cup Spinach
  • 0.5 cup Black beans
  • 1 piece Tomato
  • 1 clove Garlic
  • 1 tablespoon Cilantro
  • 1 piece Lime
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions:

  1. 1. Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool.
  2. 2. In a large bowl, mash the avocado. Add the spinach, black beans and diced tomato.
  3. 3. In a small bowl, combine the olive oil, the juice of the lime, minced garlic, and chopped cilantro. Season with salt and pepper.
  4. 4. Add the cooled quinoa to the bowl with the avocado, spinach and beans. Pour the dressing over the top and mix well.
  5. 5. Serve immediately, or refrigerate overnight for a healthy, delicious Mexican breakfast!
