
Mexican Pork Tacos

Ingredients:
- 1.5 pounds Pork shoulder
- 4 cloves Garlic cloves
- 1 tbsp Ground cumin
- 1/2 tsp Cayenne pepper
- 1 tspb Salt
- 12 pieces Corn tortillas
- 1 whole, sliced Onions
- 2 tbsp, chopped Coriander
- to taste Serve on the side Lime wedges
Instructions:
- Cut the pork shoulder into 1-2 inch pieces.
- In a large pot, add the pork, garlic cloves, cumin, cayenne pepper, and salt. Pour enough water to cover the meat and bring to a boil. Once boiling, reduce to a simmer and cover. Allow to cook for about 45 minutes, or until the pork is tender.
- While the pork is cooking, slice your onions, chop the coriander, and prepare your lime wedges.
- Once the pork is tender and cooked, remove from pot and let it cool for a few minutes. Then, shred the pork using two forks.
- Prepare your tortillas by warming them up, either in an oven, microwave, or on a pan.
- Assemble your tacos: fill your warmed tortillas with the shredded pork, a spoonful of onions, some chopped coriander, and a squeeze of lime.
