Mexican Pasta Skillet

Ingredients:

  • 2 cups pasta
  • 1 pound ground beef
  • 1 small onion
  • 1 medium bell pepper
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1.5 cups Mexican blend cheese

Instructions:

  1. Cook pasta according to package directions; drain and set aside.
  2. In a large skillet over medium heat, cook ground beef until no longer pink; drain.
  3. Add onion and bell pepper to skillet; cook until soft, about 5 minutes.
  4. Add corn, taco seasoning, and diced tomatoes to skillet; stir to combine. Cook until heated through.
  5. Add pasta and cheese to skillet; stir until well combined and cheese is melted.
