Mexican Pasta Scramble

Ingredients:

  • 1 cup pasta
  • 4 eggs
  • 1/2 cup chorizo sausage
  • 1/4 cup bell pepper, diced
  • 1/4 cup onions, diced
  • 1/2 cup tomatoes, diced
  • 1/2 cup shredded cheese
  • 1 avocado slices
  • 4 tortillas
  • to taste green chilli sauce
  • to taste salt and pepper

Instructions:

  1. Cook the pasta as per the instructions on the packet and set it aside.
  2. Heat a pan and cook the chorizo sausage. Once cooked, remove it from the pan and put it aside.
  3. In the same pan, cook the diced bell pepper and onion until tender.
  4. Add the eggs to the pan and scramble them together with the vegetables.
  5. Add the cooked chorizo and pasta to the pan and stir everything together.
  6. Add the diced tomatoes and shredded cheese. Mix it all together until the cheese melts.
  7. Serve the scramble wrapped in a tortilla and garnish with avocado slices and green chilli sauce.
  8. Season with salt and pepper to taste.
