
Mexican Pasta Scramble

Ingredients:
- 1 cup pasta
- 4 eggs
- 1/2 cup chorizo sausage
- 1/4 cup bell pepper, diced
- 1/4 cup onions, diced
- 1/2 cup tomatoes, diced
- 1/2 cup shredded cheese
- 1 avocado slices
- 4 tortillas
- to taste green chilli sauce
- to taste salt and pepper
Instructions:
- Cook the pasta as per the instructions on the packet and set it aside.
- Heat a pan and cook the chorizo sausage. Once cooked, remove it from the pan and put it aside.
- In the same pan, cook the diced bell pepper and onion until tender.
- Add the eggs to the pan and scramble them together with the vegetables.
- Add the cooked chorizo and pasta to the pan and stir everything together.
- Add the diced tomatoes and shredded cheese. Mix it all together until the cheese melts.
- Serve the scramble wrapped in a tortilla and garnish with avocado slices and green chilli sauce.
- Season with salt and pepper to taste.
