Mexican Pasta Bake

Ingredients:

  • 1 lb Pasta (preferably Penne)
  • 1 lb Ground Beef
  • 1 packet Taco Seasoning Mix
  • 1 can Canned Diced Tomatoes with Green Chilies
  • 2 cups Cheddar Cheese, shredded
  • 2 cups Mozzarella Cheese, shredded
  • 1 can Black Beans, drained and rinsed
  • 1/2 cup Sour Cream
  • 2 bunches Green Onions, chopped

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large pot of boiling salted water, cook pasta according to package instructions.
  3. Meanwhile, in a large skillet over medium heat, cook and crumble the ground beef until it is no longer pink. Add the taco seasoning and stir until well coated.
  4. Add the diced tomatoes with green chilies, black beans, and half of the green onions. Stir until well combined, then remove from heat.
  5. Drain the pasta completely and return it to the pot. Add the beef and tomato mixture, sour cream, and half of the cheeses. Stir until everything is well combined.
  6. Pour the mixture into a large casserole dish. Top with the remaining cheese and green onions.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
  8. Remove from the oven and let stand for a few minutes before serving.
