
Mexican Pasta Bake

Ingredients:
- 1 lb Pasta (preferably Penne)
- 1 lb Ground Beef
- 1 packet Taco Seasoning Mix
- 1 can Canned Diced Tomatoes with Green Chilies
- 2 cups Cheddar Cheese, shredded
- 2 cups Mozzarella Cheese, shredded
- 1 can Black Beans, drained and rinsed
- 1/2 cup Sour Cream
- 2 bunches Green Onions, chopped
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- In a large pot of boiling salted water, cook pasta according to package instructions.
- Meanwhile, in a large skillet over medium heat, cook and crumble the ground beef until it is no longer pink. Add the taco seasoning and stir until well coated.
- Add the diced tomatoes with green chilies, black beans, and half of the green onions. Stir until well combined, then remove from heat.
- Drain the pasta completely and return it to the pot. Add the beef and tomato mixture, sour cream, and half of the cheeses. Stir until everything is well combined.
- Pour the mixture into a large casserole dish. Top with the remaining cheese and green onions.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
- Remove from the oven and let stand for a few minutes before serving.
