Mexican Midnight Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Tomato Sauce
  • 1 tablespoon Chopped jalapenos
  • 1 teaspoon Ground cumin
  • 1/2 cup Black beans
  • 1/2 cup Grated cheddar cheese
  • To taste Chopped fresh cilantro

Instructions:

  1. Cook the pasta according to the packet instructions. Drain and keep it aside.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped garlic and jalapenos, saute until fragrant.
  3. Stir in the tomato sauce, cumin, and black beans. Bring it to a simmer.
  4. Add the cooked pasta to the skillet and toss it well to combine.
  5. Top it with grated cheese and cover the skillet. Allow the cheese to melt for about 2 minutes.
  6. Sprinkle fresh cilantro on top before serving. Enjoy your Mexican Midnight Pasta!
