Mexican Midnight Huevos Rancheros

Ingredients:

  • 4 units Eggs
  • 4 units Tortillas
  • 1 can Black beans, cooked and drained
  • 1 cup Cheddar cheese, shredded
  • 1 cup Red enchilada sauce
  • 1 unit Avocado, sliced
  • 1 handful Cilantro, chopped
  • 1 unit Lime wedges
  • to taste Salt and pepper

Instructions:

  1. 1. Preheat oven to 350F/175C. Arrange the tortillas on a baking tray and top each with a quarter of the black beans and cheddar cheese. Bake until cheese is melting and tortillas are crispy.
  2. 2. While tortillas are in the oven, heat the enchilada sauce in a small saucepan until warm.
  3. 3. In a separate pan, fry the eggs to your liking, seasoning with salt and pepper.
  4. 4. Top each crispy tortilla with a fried egg, spoon over the warm enchilada sauce, and garnish with avocado slices and chopped cilantro.
  5. 5. Serve immediately with lime wedges on the side for squeezing.
