
Mexican Midnight Huevos Rancheros

Ingredients:
- 4 units Eggs
- 4 units Tortillas
- 1 can Black beans, cooked and drained
- 1 cup Cheddar cheese, shredded
- 1 cup Red enchilada sauce
- 1 unit Avocado, sliced
- 1 handful Cilantro, chopped
- 1 unit Lime wedges
- to taste Salt and pepper
Instructions:
- 1. Preheat oven to 350F/175C. Arrange the tortillas on a baking tray and top each with a quarter of the black beans and cheddar cheese. Bake until cheese is melting and tortillas are crispy.
- 2. While tortillas are in the oven, heat the enchilada sauce in a small saucepan until warm.
- 3. In a separate pan, fry the eggs to your liking, seasoning with salt and pepper.
- 4. Top each crispy tortilla with a fried egg, spoon over the warm enchilada sauce, and garnish with avocado slices and chopped cilantro.
- 5. Serve immediately with lime wedges on the side for squeezing.
