Mexican Midnight Egg Tacos

Ingredients:

  • 4 units Eggs
  • 4 units Soft corn tortillas
  • 0.5 cup Salsa
  • 0.5 cup Cheddar cheese
  • 1 unit Avocado
  • 2 tablespoons Fresh cilantro
  • 2 teaspoons Olive oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Crack the eggs into the skillet, season with salt and pepper, and scramble until just set.
  3. Warm the tortillas in a dry skillet or directly over the flame of your burner.
  4. Slice the avocado and shred the cheese while the eggs are cooking.
  5. To assemble tacos, spread a spoonful of salsa on each tortilla, top with scrambled eggs, cheese, avocado slices, and fresh cilantro.
