
Mexican Midnight Egg Tacos

Ingredients:
- 4 units Eggs
- 4 units Soft corn tortillas
- 0.5 cup Salsa
- 0.5 cup Cheddar cheese
- 1 unit Avocado
- 2 tablespoons Fresh cilantro
- 2 teaspoons Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- Heat the olive oil in a non-stick skillet over medium heat.
- Crack the eggs into the skillet, season with salt and pepper, and scramble until just set.
- Warm the tortillas in a dry skillet or directly over the flame of your burner.
- Slice the avocado and shred the cheese while the eggs are cooking.
- To assemble tacos, spread a spoonful of salsa on each tortilla, top with scrambled eggs, cheese, avocado slices, and fresh cilantro.
