
Mexican Huevos Rancheros

Ingredients:
- 4 units Eggs
- 4 units Corn tortillas
- 200 g Refried beans
- 1 cup Mexican ranchero sauce
- 1/2 cup Grated cheese (Mexican blend)
- 2 tbsp Oil
- 1 unit Avocado, sliced
- to taste Cilantro, chopped
Instructions:
- Heat the oil in a pan and lightly fry the tortillas until they are slightly crispy. Set them aside.
- In the same pan, pour in some more oil if needed and fry the eggs according to how you like them.
- Heat the refried beans in a separate pan.
- To assemble, spread a layer of refried beans on each tortilla.
- Next, place an egg on top of the beans.
- Pour a generous amount of ranchero sauce over the eggs.
- Sprinkle the grated cheese on top.
- Garnish with sliced avocado and chopped cilantro.
