Mexican Huevos Rancheros

Ingredients:

  • 4 units Eggs
  • 4 units Corn tortillas
  • 200 g Refried beans
  • 1 cup Mexican ranchero sauce
  • 1/2 cup Grated cheese (Mexican blend)
  • 2 tbsp Oil
  • 1 unit Avocado, sliced
  • to taste Cilantro, chopped

Instructions:

  1. Heat the oil in a pan and lightly fry the tortillas until they are slightly crispy. Set them aside.
  2. In the same pan, pour in some more oil if needed and fry the eggs according to how you like them.
  3. Heat the refried beans in a separate pan.
  4. To assemble, spread a layer of refried beans on each tortilla.
  5. Next, place an egg on top of the beans.
  6. Pour a generous amount of ranchero sauce over the eggs.
  7. Sprinkle the grated cheese on top.
  8. Garnish with sliced avocado and chopped cilantro.
  9. Serve hot and enjoy your comforting, hearty Mexican Huevos Rancheros.
