
Mexican Fruit Enchiladas

Ingredients:
- 2 ripe mangoes
- 2 ripe peaches
- 2 ripe bananas
- 8 flour tortillas
- 1 cup granulated sugar
- 1 teaspoon cinnamon
- 2 tablespoons cornstarch
- 1 cup water
- to serve vanilla ice cream
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a baking dish.
- Peel and cut the fruits into thin slices.
- In a bowl, mix 1/2 cup of sugar and cinnamon. Sprinkle half of this mixture onto the slices of fruit.
- Place a portion of the sweetened fruit onto each tortilla, roll them up, and place them seam side down in the baking dish.
- In a small pot, combine the remaining sugar, cornstarch, and water. Bring to a boil and continuously stir for about 2 minutes until the sauce thickens.
- Pour this syrup over the enchiladas, making sure all are covered.
- Bake for 20 minutes, until the tortillas start to brown and the syrup is bubbly.
- Serve warm, top with vanilla ice cream for added comfort!
