Mexican Fruit Enchiladas

Ingredients:

  • 2 ripe mangoes
  • 2 ripe peaches
  • 2 ripe bananas
  • 8 flour tortillas
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 1 cup water
  • to serve vanilla ice cream

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a baking dish.
  2. Peel and cut the fruits into thin slices.
  3. In a bowl, mix 1/2 cup of sugar and cinnamon. Sprinkle half of this mixture onto the slices of fruit.
  4. Place a portion of the sweetened fruit onto each tortilla, roll them up, and place them seam side down in the baking dish.
  5. In a small pot, combine the remaining sugar, cornstarch, and water. Bring to a boil and continuously stir for about 2 minutes until the sauce thickens.
  6. Pour this syrup over the enchiladas, making sure all are covered.
  7. Bake for 20 minutes, until the tortillas start to brown and the syrup is bubbly.
  8. Serve warm, top with vanilla ice cream for added comfort!
