Mexican Fruit Breakfast Tacos

Ingredients:

  • 8 pieces whole wheat tortillas
  • 1 whole ripe mango
  • 2 whole ripe kiwi
  • 1 whole ripe banana
  • 1 whole lime
  • 3 tablespoons honey
  • to taste fresh mint leaves
  • 1 cup vanilla Greek yogurt
  • 1 cup granola

Instructions:

  1. 1. Peel and dice the mango and kiwis. Slice the banana. Cut the lime in half.
  2. 2. On each tortilla, spread a spoonful of Greek yogurt.
  3. 3. Divide the diced fruits among the tortillas. Add banana slices on top.
  4. 4. Drizzle honey over the fruits, then sprinkle granola on top.
  5. 5. Tear fresh mint leaves and sprinkle on the tacos for extra flavor.
  6. 6. Fold each tortilla in half, like a traditional taco. Squeeze lime juice over the tacos just before serving for added tang.
