Mexican Firecracker Rice

Ingredients:

  • 1.5 cup Long-grain brown rice
  • 3 cups Chicken stock
  • 1 whole Red bell pepper
  • 1 whole Green bell pepper
  • 1 whole Yellow bell pepper
  • 200 grams Chorizo sausage
  • 1 can Cannellini beans
  • 2 tablespoons Olive oil
  • 2 whole Garlic cloves
  • 2 teaspoons Paprika
  • 1 teaspoon Cumin seeds
  • to taste pinch Chili flakes
  • to taste Salt
  • to taste Black pepper
  • for garnish bunch Fresh cilantro leaves

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Add the chorizo and cook until browned. Remove and set aside.
  2. In the same pan, add the garlic, bell peppers, paprika, cumin seeds, and chili flakes. Cook until the peppers are soft.
  3. Add the rice to the pan and stir so that the grains are coated in the oil and spices. Cook for another 2 minutes.
  4. Add the chicken stock to the pan, bring to a boil, then reduce the heat and simmer until the rice is cooked.
  5. Once the rice is cooked, add the chorizo and beans to the pan. Continue to simmer until everything is heated through.
  6. Season with salt and black pepper to taste, and garnish with fresh cilantro before serving.
