
Mexican Firecracker Rice

Ingredients:
- 1.5 cup Long-grain brown rice
- 3 cups Chicken stock
- 1 whole Red bell pepper
- 1 whole Green bell pepper
- 1 whole Yellow bell pepper
- 200 grams Chorizo sausage
- 1 can Cannellini beans
- 2 tablespoons Olive oil
- 2 whole Garlic cloves
- 2 teaspoons Paprika
- 1 teaspoon Cumin seeds
- to taste pinch Chili flakes
- to taste Salt
- to taste Black pepper
- for garnish bunch Fresh cilantro leaves
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Add the chorizo and cook until browned. Remove and set aside.
- In the same pan, add the garlic, bell peppers, paprika, cumin seeds, and chili flakes. Cook until the peppers are soft.
- Add the rice to the pan and stir so that the grains are coated in the oil and spices. Cook for another 2 minutes.
- Add the chicken stock to the pan, bring to a boil, then reduce the heat and simmer until the rice is cooked.
- Once the rice is cooked, add the chorizo and beans to the pan. Continue to simmer until everything is heated through.
- Season with salt and black pepper to taste, and garnish with fresh cilantro before serving.
