
Mexican Egg Chilaquiles

Ingredients:
- 10 pieces Corn Tortilla
- 4 pieces Eggs
- 1 cup Green Salsa
- 1 small Onion
- 2 pieces Garlic Clove
- 1 cup Cheddar Cheese
- 2 tablespoons Olive Oil
- To taste Salt
- To taste Pepper
Instructions:
- Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a baking dish.
- In a large skillet over medium heat, heat the olive oil. Add the onions and garlic, and sauté until soft and translucent.
- Add the tortilla pieces to the skillet. Cook them until they are slightly crispy.
- In a separate bowl, whisk the eggs with salt and pepper. Pour scrambled eggs over the tortilla, stirring gently to ensure an even distribution. Pour the salsa over the top.
- Sprinkle cheddar cheese over the top of the mixture.
- Bake in the preheated oven until cheesy is bubbly and slightly golden brown, about 20 - 25 minutes.
- Serve the Chilaquiles warm with some extra salsa on the side.
