Mexican Egg Chilaquiles

Ingredients:

  • 10 pieces Corn Tortilla
  • 4 pieces Eggs
  • 1 cup Green Salsa
  • 1 small Onion
  • 2 pieces Garlic Clove
  • 1 cup Cheddar Cheese
  • 2 tablespoons Olive Oil
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a baking dish.
  2. In a large skillet over medium heat, heat the olive oil. Add the onions and garlic, and sauté until soft and translucent.
  3. Add the tortilla pieces to the skillet. Cook them until they are slightly crispy.
  4. In a separate bowl, whisk the eggs with salt and pepper. Pour scrambled eggs over the tortilla, stirring gently to ensure an even distribution. Pour the salsa over the top.
  5. Sprinkle cheddar cheese over the top of the mixture.
  6. Bake in the preheated oven until cheesy is bubbly and slightly golden brown, about 20 - 25 minutes.
  7. Serve the Chilaquiles warm with some extra salsa on the side.
