
Mexican Comfort Rice

Ingredients:
- 1 Cup Rice
- 2 Cups Chicken broth
- 1 Cup Canned tomatoes
- 1 Cup Grated cheese
- 1 Cup Black beans
- 1 unit Onion
- 2 units Garlic cloves
- to taste Spices (cumin, chili powder, paprika)
Instructions:
- In a large pot, sauté the diced onions and minced garlic until they become aromatic.
- Add the rice to the pot and sauté for a few minutes until slightly toasted.
- Add the chicken broth, canned tomatoes, and spices into the pot. Stir and bring the mixture to a boil.
- Lower the heat, cover the pot and let it simmer for about 20 minutes or until the rice is cooked.
- Stir in the black beans and cheese, cover and let it melt for a few minutes.
- Serve warm and enjoy your Mexican Comfort Rice!
