Mexican Comfort Rice

Ingredients:

  • 1 Cup Rice
  • 2 Cups Chicken broth
  • 1 Cup Canned tomatoes
  • 1 Cup Grated cheese
  • 1 Cup Black beans
  • 1 unit Onion
  • 2 units Garlic cloves
  • to taste Spices (cumin, chili powder, paprika)

Instructions:

  1. In a large pot, sauté the diced onions and minced garlic until they become aromatic.
  2. Add the rice to the pot and sauté for a few minutes until slightly toasted.
  3. Add the chicken broth, canned tomatoes, and spices into the pot. Stir and bring the mixture to a boil.
  4. Lower the heat, cover the pot and let it simmer for about 20 minutes or until the rice is cooked.
  5. Stir in the black beans and cheese, cover and let it melt for a few minutes.
  6. Serve warm and enjoy your Mexican Comfort Rice!
