
Mexican Comfort Fish Tacos

Ingredients:
- 4 pieces Fish fillets
- 8 pieces Tortillas
- 2 pieces Avocado
- 1 piece Lime
- 2 pieces Tomatoes
- 1 piece Red onion
- 1/2 bunch Cilantro
- 1 cup Plain Greek yogurt
- 1 piece Chipotle pepper
- 2 tablespoons Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- Preheat your grill or stove top griddle.
- Drizzle the fish fillets with olive oil and season with salt and pepper on both sides.
- Grill the fish on each side for about 3-4 minutes until opaque and easily flaked with a fork.
- While the fish is grilling, start preparing the toppings. Slice the avocados, limes, tomatoes, and red onion. Chop the cilantro.
- To make the chipotle cream sauce, pure the Greek yogurt and chipotle pepper in a blender until smooth. Season with salt to taste.
- Once the fish is cooked, let it rest for a few minutes before breaking it apart into bite-sized pieces.
- Warm the tortillas on the grill or griddle until they are soft and pliable.
- Assemble the tacos by spreading a spoonful of chipotle cream sauce on a tortilla, then adding a few pieces of fish, and topping with avocados, tomatoes, red onion, and cilantro. Squeeze a bit of lime juice on top if you like.
