Mexican Comfort Enchiladas

Ingredients:

  • 2 pieces Chicken breast
  • 2 cups Enchilada sauce
  • 1 medium sized Onion
  • 2 Garlic clove
  • 1.5 cups Cheddar cheese
  • 1/2 cup Cream cheese
  • 8 Tortillas
  • 4.5 ounces Green chilies
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Place the chicken in a pan with olive oil over medium heat. Cook until it's no longer pink in the middle, then remove and shred the chicken.
  3. In the same pan, sauté the onions until they're slightly clear. Add the garlic and continue to cook for an additional minute.
  4. Remove the pan from heat and add the shredded chicken, cream cheese, green chilies, and half of the enchilada sauce. Stir until it's all well-mixed.
  5. Pour a small amount of the enchilada sauce into a casserole dish. Place a scoop of the chicken mixture into each tortilla, roll them up, and place them in the dish.
  6. Pour the remaining enchilada sauce over the enchiladas and sprinkle the cheddar cheese on top.
  7. Bake at 375 degrees for 25 minutes or until the cheese is bubbly. Serve warm.
