
Mexican Comfort Enchiladas

Ingredients:
- 2 pieces Chicken breast
- 2 cups Enchilada sauce
- 1 medium sized Onion
- 2 Garlic clove
- 1.5 cups Cheddar cheese
- 1/2 cup Cream cheese
- 8 Tortillas
- 4.5 ounces Green chilies
- 1 tablespoon Olive oil
- to taste Salt and pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Place the chicken in a pan with olive oil over medium heat. Cook until it's no longer pink in the middle, then remove and shred the chicken.
- In the same pan, sauté the onions until they're slightly clear. Add the garlic and continue to cook for an additional minute.
- Remove the pan from heat and add the shredded chicken, cream cheese, green chilies, and half of the enchilada sauce. Stir until it's all well-mixed.
- Pour a small amount of the enchilada sauce into a casserole dish. Place a scoop of the chicken mixture into each tortilla, roll them up, and place them in the dish.
- Pour the remaining enchilada sauce over the enchiladas and sprinkle the cheddar cheese on top.
- Bake at 375 degrees for 25 minutes or until the cheese is bubbly. Serve warm.
