
Mexican Chicken Quesadilla

Ingredients:
- 2 pieces Chicken breasts
- 8 pieces Flour tortillas
- 2 cups Shredded cheese
- 1 piece Green bell pepper
- 1 piece Red onion
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt
- to taste Pepper
- 2 tablespoons Oil
Instructions:
- Preheat a skillet over medium heat, add oil.
- Chop the chicken, green bell pepper, and red onion into small pieces.
- Add the chicken to the skillet and cook until no longer pink. Add the cumin, paprika, salt, and pepper.
- Add the green bell pepper and red onion to the skillet and cook until softened.
- Lay out a tortilla, put some of the chicken mixture on half of it, sprinkle with cheese, then fold the tortilla over.
- Cook the quesadilla in the skillet until golden brown, then flip and cook the other side until golden brown and the cheese is melted. Repeat with the remaining tortillas, chicken mixture, and cheese.
- Cut the quesadillas into wedges and serve warm.
