Mexican Chicken Breakfast Tacos

Ingredients:

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 package Taco seasoning
  • 4 pieces Eggs
  • 8 pieces Small flour tortillas
  • 1 cup Shredded cheese
  • 1 piece Avocado
  • to taste Salsa

Instructions:

  1. Heat 1 tablespoon of olive oil in a pan over medium heat and add the chicken breasts.
  2. Sprinkle the chicken with the taco seasoning, turn over after 7-10 minutes and cook until fully done.
  3. While the chicken is cooking, scramble the eggs in another pan with the remaining olive oil.
  4. Slice the avocado into thin pieces and set it aside.
  5. When the chicken is done, let it cool and shred it into small pieces.
  6. Warm the tortillas in a dry pan over medium heat.
  7. Assemble the tacos by placing a scoop of scrambled eggs, shredded chicken, and a sprinkle of cheese into each tortilla. Top with avocado slices and salsa.
  8. Serve warm.
