
Mexican Chicken Breakfast Tacos

Ingredients:
- 2 pieces Chicken breasts
- 2 tablespoons Olive oil
- 1 package Taco seasoning
- 4 pieces Eggs
- 8 pieces Small flour tortillas
- 1 cup Shredded cheese
- 1 piece Avocado
- to taste Salsa
Instructions:
- Heat 1 tablespoon of olive oil in a pan over medium heat and add the chicken breasts.
- Sprinkle the chicken with the taco seasoning, turn over after 7-10 minutes and cook until fully done.
- While the chicken is cooking, scramble the eggs in another pan with the remaining olive oil.
- Slice the avocado into thin pieces and set it aside.
- When the chicken is done, let it cool and shred it into small pieces.
- Warm the tortillas in a dry pan over medium heat.
- Assemble the tacos by placing a scoop of scrambled eggs, shredded chicken, and a sprinkle of cheese into each tortilla. Top with avocado slices and salsa.
- Serve warm.
