Mexican Brown Rice & Black Bean Burritos

Ingredients:

  • 1 cup Brown Rice
  • 15 ounces Cooked Black Beans
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 cup Grated Sharp Cheddar
  • 4 Whole Wheat Flour Tortillas
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Garlic Clove
  • 1 Onion
  • 1/2 cup Cilantro
  • 2 Limes
  • 1 Tomato

Instructions:

  1. 1. Cook the brown rice according to the package instructions.
  2. 2. While the rice is cooking, dice the peppers, onions, tomato and cilantro. Set aside.
  3. 3. In a large pan, heat the olive oil on medium heat. Add the diced onions, peppers, and minced garlic to the pan. Cook until the vegetables are tender.
  4. 4. Add the cooked black beans, diced tomato and half of the cilantro. Stir well to combine and let it simmer for about 10 minutes.
  5. 5. Once the rice is done cooking, add it to the pan with the vegetables and beans. Stir until everything is well combined and allow it to cook for an additional 5 minutes.
  6. 6. Warm the tortillas in a dry skillet over medium heat until they are heated through and pliable.
  7. 7. Spoon an even amount of the rice mixture down the center of each tortilla. Top it off with some of the shredded cheese and some of the leftover fresh cilantro. Roll up each burrito tightly.
  8. 8. Slice each burrito in half and serve warm with lime wedges.
