Mexican Breakfast Scrambled Eggs

Ingredients:

  • 8 pcs Eggs
  • 1 cup Chopped Onion
  • 1 cup Bell Pepper
  • 1 large Tomato
  • 1 cup Grated Cheddar Cheese
  • 8 pcs Tortillas
  • 2 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. 1. Heat olive oil in a large skillet on medium heat.
  2. 2. Add onions and bell pepper, cook until they are soft and slightly browned.
  3. 3. Dice the tomatoes and add them to the skillet, cook for another 2-3 minutes.
  4. 4. While the vegetables are cooking, crack the eggs into a bowl and whisk until well blended.
  5. 5. Pour the eggs into the skillet over the vegetables. Let it sit for a bit without stirring then gently scramble them till they’re just set, but still soft.
  6. 6. Sprinkle the grated cheese over the eggs. Cover the skillet and lower the heat. Let it sit for a few minutes until the cheese is melted.
  7. 7. Season with salt and black pepper.
  8. 8. Warm the tortillas in a dry skillet over high heat.
  9. 9. Serve the scrambled eggs with warm tortillas on the side.
