
Mexican Breakfast Scrambled Eggs

Ingredients:
- 8 pcs Eggs
- 1 cup Chopped Onion
- 1 cup Bell Pepper
- 1 large Tomato
- 1 cup Grated Cheddar Cheese
- 8 pcs Tortillas
- 2 tbsp Olive Oil
- to taste Salt
- to taste Black Pepper
Instructions:
- 1. Heat olive oil in a large skillet on medium heat.
- 2. Add onions and bell pepper, cook until they are soft and slightly browned.
- 3. Dice the tomatoes and add them to the skillet, cook for another 2-3 minutes.
- 4. While the vegetables are cooking, crack the eggs into a bowl and whisk until well blended.
- 5. Pour the eggs into the skillet over the vegetables. Let it sit for a bit without stirring then gently scramble them till they’re just set, but still soft.
- 6. Sprinkle the grated cheese over the eggs. Cover the skillet and lower the heat. Let it sit for a few minutes until the cheese is melted.
- 7. Season with salt and black pepper.
- 8. Warm the tortillas in a dry skillet over high heat.
- 9. Serve the scrambled eggs with warm tortillas on the side.
