
Mexican Breakfast Rice Bowl

Ingredients:
- 1 cup Long-grain rice
- 1 cup Black beans
- A handful Cilantro leaves
- 1 Chorizo sausage
- 1 Avocado
- A handful Cherry tomatoes
- 2 Eggs
- 1 Lime
- 2 tablespoons Olive oil
Instructions:
- Cook the rice as per the instructions on the packet and set aside.
- In a large skillet, heat the olive oil over a medium heat. Add the chorizo sausage and cook until browned and crisp. Remove and set aside.
- In the same skillet, add the black beans and cook them until they're warmed through. Remove and set aside with the chorizo.
- In the same skillet, fry the eggs to your liking.
- Slice the avocado and cherry tomatoes, and chop the cilantro leaves.
- To serve, divide the cooked rice between two bowls. Top each bowl with the cooked chorizo, warmed black beans, sliced avocado, tomatoes, and fried egg.
- Squeeze fresh lime juice over each bowl and sprinkle with chopped cilantro. Serve immediately and enjoy your exotic Mexican Breakfast Rice Bowl!
