Mexican Breakfast Rice Bowl

Ingredients:

  • 1 cup Long-grain rice
  • 1 cup Black beans
  • A handful Cilantro leaves
  • 1 Chorizo sausage
  • 1 Avocado
  • A handful Cherry tomatoes
  • 2 Eggs
  • 1 Lime
  • 2 tablespoons Olive oil

Instructions:

  1. Cook the rice as per the instructions on the packet and set aside.
  2. In a large skillet, heat the olive oil over a medium heat. Add the chorizo sausage and cook until browned and crisp. Remove and set aside.
  3. In the same skillet, add the black beans and cook them until they're warmed through. Remove and set aside with the chorizo.
  4. In the same skillet, fry the eggs to your liking.
  5. Slice the avocado and cherry tomatoes, and chop the cilantro leaves.
  6. To serve, divide the cooked rice between two bowls. Top each bowl with the cooked chorizo, warmed black beans, sliced avocado, tomatoes, and fried egg.
  7. Squeeze fresh lime juice over each bowl and sprinkle with chopped cilantro. Serve immediately and enjoy your exotic Mexican Breakfast Rice Bowl!
