Mexican Breakfast Pork Tacos

Ingredients:

  • 1 pound boneless pork loin
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 8 pieces corn tortillas
  • 1 pc avocado
  • 1 pc tomato
  • 1 pc onion
  • 1 pc lime
  • 1/4 cup cilantro
  • To taste salt
  • To taste black pepper

Instructions:

  1. 1. Cut the boneless pork loin into thin slices. Marinade with salt, pepper, cumin, paprika, and minced garlic. Set aside for 15 minutes.
  2. 2. Preheat your skillet over medium-high heat. Add the marinated pork and cook until browned and cooked through.
  3. 3. Warm the corn tortillas on a skillet over medium heat. Once warm, set aside.
  4. 4. Slice the avocado, tomato, and onion. Set aside.
  5. 5. Assemble tacos by placing some cooked pork on a tortilla, then topping with sliced avocado, tomato, onion, cilantro, and a squeeze of lime juice.
  6. 6. Repeat with remaining tacos.
