Mexican Breakfast Pasta

Ingredients:

  • 200 grams Fusilli pasta
  • 100 grams Mexican chorizo
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 can Chopped tomatoes
  • 1 piece Red bell pepper
  • 2 pieces Eggs
  • A handful n/a Fresh cilantro
  • To taste n/a Salt and pepper

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chorizo and cook until browned and crispy.
  3. Add the garlic and red bell pepper to the skillet and cook until the garlic is fragrant and the bell pepper is soft.
  4. Add the chopped tomatoes to the skillet and stir to combine. Let the mixture simmer for a few minutes until the tomatoes are heated through.
  5. Stir in the cooked pasta and toss until the pasta is coated in the tomato and chorizo mixture. Adjust the seasoning with salt and pepper if needed.
  6. Create two wells in the pasta and crack the eggs into the wells. Cover the skillet and let the eggs cook to your desired level of doneness.
  7. Garnish the pasta with fresh cilantro before serving. Enjoy your quick and easy Mexican breakfast pasta!
