
Mexican Breakfast Pasta

Ingredients:
- 200 grams Fusilli pasta
- 100 grams Mexican chorizo
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 can Chopped tomatoes
- 1 piece Red bell pepper
- 2 pieces Eggs
- A handful n/a Fresh cilantro
- To taste n/a Salt and pepper
Instructions:
- Cook the pasta according to the package instructions. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chorizo and cook until browned and crispy.
- Add the garlic and red bell pepper to the skillet and cook until the garlic is fragrant and the bell pepper is soft.
- Add the chopped tomatoes to the skillet and stir to combine. Let the mixture simmer for a few minutes until the tomatoes are heated through.
- Stir in the cooked pasta and toss until the pasta is coated in the tomato and chorizo mixture. Adjust the seasoning with salt and pepper if needed.
- Create two wells in the pasta and crack the eggs into the wells. Cover the skillet and let the eggs cook to your desired level of doneness.
