Mexican Breakfast Fish Tacos

Ingredients:

  • 4 fillets White fish
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 8 pieces Whole wheat tortillas
  • 1 large Avocado
  • 2 medium Tomato
  • 1 piece Fresh lime
  • 1/4 cup Fresh cilantro

Instructions:

  1. Firstly, mix the olive oil, garlic powder, chili powder, salt, and pepper in a bowl.
  2. Marinate the fish fillets in this mixture and let them sit for 15 minutes.
  3. Meanwhile, dice the avocado and tomatoes, and chop the fresh cilantro. Set aside.
  4. Heat up a frying pan over medium heat. Cook the fish fillets for 3-4 minutes each side, until nicely browned and flakey.
  5. Warm up the tortillas in a dry pan over high heat for about 30 seconds each side.
  6. To assemble the tacos, place a piece of cooked fish on a tortilla, top it with the avocado, tomatoes, and cilantro. Squeeze some lime on top.
  7. Repeat with the rest of the tacos. Enjoy your healthy and delicious Mexican breakfast fish tacos!
