Mexican Breakfast Chorizo & Egg Scramble

Ingredients:

  • 1/2 pound chorizo
  • 1 tablespoon olive oil
  • 1 tomato
  • 2 garlic clove
  • 4 eggs
  • 1/2 teaspoon cumin
  • to taste hot sauce
  • 1/4 cup fresh cilantro
  • 2 corn tortillas
  • 1 lime wedges

Instructions:

  1. 1. In a large skillet, heat the olive oil over medium heat. Add the chorizo and cook for about 5 minutes, stirring occasionally.
  2. 2. Meanwhile, dice the tomato and mince the garlic. Add these to the skillet and stir until the tomato is saucy and the garlic aromatic.
  3. 3. Crack the eggs into a bowl and whisk them with the cumin. Pour this into the skillet and stir gently, letting the eggs absorb the chorizo's flavor.
  4. 4. Cook, stirring occasionally, until the eggs are as soft or as firm as you like them. Add hot sauce to taste, then remove from heat.
  5. 5. Chop the cilantro coarsely, then stir into the eggs. Serve the scramble with warm corn tortillas and a squeeze of lime juice. Enjoy your Mexican exotic breakfast!
