
Mexican Breakfast Chorizo & Egg Scramble

Ingredients:
- 1/2 pound chorizo
- 1 tablespoon olive oil
- 1 tomato
- 2 garlic clove
- 4 eggs
- 1/2 teaspoon cumin
- to taste hot sauce
- 1/4 cup fresh cilantro
- 2 corn tortillas
- 1 lime wedges
Instructions:
- 1. In a large skillet, heat the olive oil over medium heat. Add the chorizo and cook for about 5 minutes, stirring occasionally.
- 2. Meanwhile, dice the tomato and mince the garlic. Add these to the skillet and stir until the tomato is saucy and the garlic aromatic.
- 3. Crack the eggs into a bowl and whisk them with the cumin. Pour this into the skillet and stir gently, letting the eggs absorb the chorizo's flavor.
- 4. Cook, stirring occasionally, until the eggs are as soft or as firm as you like them. Add hot sauce to taste, then remove from heat.
- 5. Chop the cilantro coarsely, then stir into the eggs. Serve the scramble with warm corn tortillas and a squeeze of lime juice. Enjoy your Mexican exotic breakfast!
