
Mexican Breakfast Beef Tacos

Ingredients:
- 1 pound Beef
- 8 Corn tortillas
- 1 Avocado
- 0.5 cup, chopped Red onion
- 0.25 cup, chopped Cilantro
- 2 tablespoons Lime juice
- to taste Salt and pepper
- 1 cup, grated Cheese
- 2 tablespoons Olive oil
Instructions:
- Heat the olive oil in a pan over medium heat. Add the beef and season with salt and pepper. Cook until browned and no longer pink, about 5-7 minutes.
- While the beef is cooking, warm the tortillas in a dry skillet over medium heat. Flip occasionally to ensure both sides are warm.
- In a small bowl, combine chopped red onion, cilantro, and lime juice. Season with salt and pepper.
- Slice the avocado and set aside.
- Once beef is cooked, divide it among the warm tortillas.
- Top each taco with the onion and cilantro mixture, avocado slices, and grated cheese.
