Mexican Breakfast Beef Tacos

Ingredients:

  • 1 pound Beef
  • 8 Corn tortillas
  • 1 Avocado
  • 0.5 cup, chopped Red onion
  • 0.25 cup, chopped Cilantro
  • 2 tablespoons Lime juice
  • to taste Salt and pepper
  • 1 cup, grated Cheese
  • 2 tablespoons Olive oil

Instructions:

  1. Heat the olive oil in a pan over medium heat. Add the beef and season with salt and pepper. Cook until browned and no longer pink, about 5-7 minutes.
  2. While the beef is cooking, warm the tortillas in a dry skillet over medium heat. Flip occasionally to ensure both sides are warm.
  3. In a small bowl, combine chopped red onion, cilantro, and lime juice. Season with salt and pepper.
  4. Slice the avocado and set aside.
  5. Once beef is cooked, divide it among the warm tortillas.
  6. Top each taco with the onion and cilantro mixture, avocado slices, and grated cheese.
  7. Serve immediately and enjoy your Mexican Breakfast Beef Tacos.
