
Mexican Beef Enchiladas

Ingredients:
- 1 lb Ground Beef
- 1 medium size Onion
- 2 pieces Garlic cloves
- 1 (19 oz.) can Can of enchilada sauce
- 1 (16 oz.) can Refried beans
- 12 pieces Corn tortillas
- 2 cups Shredded mexican cheese blend
- to taste Sour cream
- to taste Guacamole
- for garnish Chopped fresh cilantro
Instructions:
- Preheat oven to 375 degrees F (190 degrees C)
- Cook beef in a skillet over medium heat until crumbly and slightly browned, 5 to 10 minutes. Drain excess grease
- Stir onion into beef; cook and stir until onion is translucent, 5 to 10 minutes.
- Stir garlic into beef mixture; cook and stir to blend flavors, 5 more minutes.
- Mix enchilada sauce into beef and onion mixture; bring to a simmer and cook until heated through, about 10 minutes.
- Spread refried beans down the center of each tortilla; top with beef mixture. Roll tortilla around the filling and arrange in a baking dish. Pour remaining enchilada sauce over filled tortillas.
- Sprinkle cheese over tortillas and sauce.
- Bake in the preheated oven until cheese is melted and sauce is bubbling, about 25 minutes.
- Garnish your enchiladas with sour cream, guacamole, and a sprinkle of cilantro before serving.
