Mexican Beef Enchiladas

Ingredients:

  • 1 lb Ground Beef
  • 1 medium size Onion
  • 2 pieces Garlic cloves
  • 1 (19 oz.) can Can of enchilada sauce
  • 1 (16 oz.) can Refried beans
  • 12 pieces Corn tortillas
  • 2 cups Shredded mexican cheese blend
  • to taste Sour cream
  • to taste Guacamole
  • for garnish Chopped fresh cilantro

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Cook beef in a skillet over medium heat until crumbly and slightly browned, 5 to 10 minutes. Drain excess grease
  3. Stir onion into beef; cook and stir until onion is translucent, 5 to 10 minutes.
  4. Stir garlic into beef mixture; cook and stir to blend flavors, 5 more minutes.
  5. Mix enchilada sauce into beef and onion mixture; bring to a simmer and cook until heated through, about 10 minutes.
  6. Spread refried beans down the center of each tortilla; top with beef mixture. Roll tortilla around the filling and arrange in a baking dish. Pour remaining enchilada sauce over filled tortillas.
  7. Sprinkle cheese over tortillas and sauce.
  8. Bake in the preheated oven until cheese is melted and sauce is bubbling, about 25 minutes.
  9. Garnish your enchiladas with sour cream, guacamole, and a sprinkle of cilantro before serving.
