Mexican Beef Breakfast Tacos

Ingredients:

  • 1/2 pound Beef strips
  • 4 Whole grain tortillas
  • 1/2 cup Black beans
  • 1 Avocado
  • 1/2 cup Fresh salsa
  • 4 Eggs
  • 1/2 cup Cheddar cheese
  • 1 Lime
  • to taste Salt and pepper

Instructions:

  1. Heat a large pan over medium heat. Add the beef strips and cook until browned. Remove from the pan and set aside.
  2. In the same pan, add the eggs and scramble until desired doneness. Set aside with the beef.
  3. Warm the tortillas in the oven or on a griddle.
  4. Assemble the tacos by layering the beef, scrambled eggs, black beans, and cheese on the warmed tortillas.
  5. Top with diced avocado, fresh salsa, and a squeeze of lime. Season with salt and pepper to taste.
  6. Serve immediately with side of fresh fruit for a balanced, healthy breakfast.
