
Mexican Beef Breakfast Tacos

Ingredients:
- 1/2 pound Beef strips
- 4 Whole grain tortillas
- 1/2 cup Black beans
- 1 Avocado
- 1/2 cup Fresh salsa
- 4 Eggs
- 1/2 cup Cheddar cheese
- 1 Lime
- to taste Salt and pepper
Instructions:
- Heat a large pan over medium heat. Add the beef strips and cook until browned. Remove from the pan and set aside.
- In the same pan, add the eggs and scramble until desired doneness. Set aside with the beef.
- Warm the tortillas in the oven or on a griddle.
- Assemble the tacos by layering the beef, scrambled eggs, black beans, and cheese on the warmed tortillas.
- Top with diced avocado, fresh salsa, and a squeeze of lime. Season with salt and pepper to taste.
- Serve immediately with side of fresh fruit for a balanced, healthy breakfast.
