
Mexican Beef Breakfast Burritos

Ingredients:
- 1 pound Ground beef
- 1 medium Onion
- 2 units Bell peppers
- 6 units Eggs
- 1.5 cups Cheddar cheese
- 4 units Flour tortillas
- 2 tablespoons Olive oil
- to taste Salt
- to taste Black pepper
- to serve Salsa
- for garnish Cilantro leaves
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the ground beef, onion and bell peppers, season with salt and black pepper. Cook, stirring occasionally, until meat is browned and vegetables are tender. Drain excess fat.
- In a separate bowl, beat the eggs. Pour the eggs into the same skillet with the beef and vegetables. Stir until the eggs are fully cooked.
- Warm the flour tortillas in a dry skillet over medium heat until soft and pliable.
- Place a scoop of the beef and egg mixture into the center of each tortilla. Top with cheddar cheese and fold the tortilla over the filling to close the burrito.
