Mexican Beef Breakfast Burritos

Ingredients:

  • 1 pound Ground beef
  • 1 medium Onion
  • 2 units Bell peppers
  • 6 units Eggs
  • 1.5 cups Cheddar cheese
  • 4 units Flour tortillas
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • to serve Salsa
  • for garnish Cilantro leaves

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground beef, onion and bell peppers, season with salt and black pepper. Cook, stirring occasionally, until meat is browned and vegetables are tender. Drain excess fat.
  3. In a separate bowl, beat the eggs. Pour the eggs into the same skillet with the beef and vegetables. Stir until the eggs are fully cooked.
  4. Warm the flour tortillas in a dry skillet over medium heat until soft and pliable.
  5. Place a scoop of the beef and egg mixture into the center of each tortilla. Top with cheddar cheese and fold the tortilla over the filling to close the burrito.
  6. Serve warm with salsa and garnish with cilantro leaves. Enjoy your Mexican Beef Breakfast Burrito!
