
Mediterranean Veggie Wraps

Ingredients:
- 4 pieces Whole wheat tortillas
- 1 cup Hummus
- 2 cups Fresh spinach
- 1 large Tomato
- 1 medium Cucumber
- 1 small Red onion
- 1/2 cup Feta cheese
- 1/4 cup Olives
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon juice
- 1 bunch Fresh parsley
- to taste Salt and pepper
Instructions:
- Spread the hummus evenly on the tortillas.
- Top with spinach. Add the sliced tomato, cucumber, and onion.
- Crumble the feta cheese on top and sprinkle with olives.
- Drizzle the olive oil and lemon juice over the top. Season with salt and pepper.
- Garnish with chopped fresh parsley.
- Roll up the tortillas, tucking in the sides as you go. Slice in half diagonally and serve.
