Mediterranean Veggie Wraps

Ingredients:

  • 4 pieces Whole wheat tortillas
  • 1 cup Hummus
  • 2 cups Fresh spinach
  • 1 large Tomato
  • 1 medium Cucumber
  • 1 small Red onion
  • 1/2 cup Feta cheese
  • 1/4 cup Olives
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Lemon juice
  • 1 bunch Fresh parsley
  • to taste Salt and pepper

Instructions:

  1. Spread the hummus evenly on the tortillas.
  2. Top with spinach. Add the sliced tomato, cucumber, and onion.
  3. Crumble the feta cheese on top and sprinkle with olives.
  4. Drizzle the olive oil and lemon juice over the top. Season with salt and pepper.
  5. Garnish with chopped fresh parsley.
  6. Roll up the tortillas, tucking in the sides as you go. Slice in half diagonally and serve.
