
Mediterranean Veggie Skewers

Ingredients:
- 2 whole Zucchini
- 1 whole Red Bell Pepper
- 1 whole Yellow Bell Pepper
- 250 grams Mushroom
- 1 whole Red Onion
- 200 grams Cherry Tomatoes
- 3 tablespoons Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- To Taste Salt
- To Taste Black Pepper
- 8 pieces Skewers
Instructions:
- Preheat your grill or grill pan over medium heat.
- Cut zucchini, bell peppers and red onion into 1-inch pieces.
- Thread the zucchini, bell peppers, mushrooms, onion, and cherry tomatoes onto skewers.
- In a small bowl, mix together olive oil, oregano, basil, salt, and pepper.
- Brush the skewers with the olive oil mixture.
- Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are charred and tender.
- Remove from grill and serve immediately.
