Mediterranean Veggie Skewers

Ingredients:

  • 2 whole Zucchini
  • 1 whole Red Bell Pepper
  • 1 whole Yellow Bell Pepper
  • 250 grams Mushroom
  • 1 whole Red Onion
  • 200 grams Cherry Tomatoes
  • 3 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • To Taste Salt
  • To Taste Black Pepper
  • 8 pieces Skewers

Instructions:

  1. Preheat your grill or grill pan over medium heat.
  2. Cut zucchini, bell peppers and red onion into 1-inch pieces.
  3. Thread the zucchini, bell peppers, mushrooms, onion, and cherry tomatoes onto skewers.
  4. In a small bowl, mix together olive oil, oregano, basil, salt, and pepper.
  5. Brush the skewers with the olive oil mixture.
  6. Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are charred and tender.
  7. Remove from grill and serve immediately.
