
Mediterranean Veggie Pasta Salad

Ingredients:
- 2 cups Whole grain pasta
- 1 cup Cherry tomatoes
- 1 whole Cucumber
- 1 whole Bell Pepper
- 1/2 whole Red onion
- 1/4 cup Black olives
- 2 tablespoons Extra virgin olive oil
- 1 tablespoon Lemon juice
- 1/2 teaspoon Garlic powder
- 1 teaspoon Dried oregano
- to taste Salt and Pepper
Instructions:
- Cook the pasta according to package instructions, then rinse under cold water and drain.
- Cut the cherry tomatoes in half, dice the cucumber, bell pepper, and red onion, and slice the black olives.
- In a large bowl, combine the cooked pasta, tomatoes, cucumber, bell pepper, red onion, and olives.
- In a small bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine. Refrigerate for at least 1 hour before serving.
