Mediterranean Veggie Pasta Salad

Ingredients:

  • 2 cups Whole grain pasta
  • 1 cup Cherry tomatoes
  • 1 whole Cucumber
  • 1 whole Bell Pepper
  • 1/2 whole Red onion
  • 1/4 cup Black olives
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • to taste Salt and Pepper

Instructions:

  1. Cook the pasta according to package instructions, then rinse under cold water and drain.
  2. Cut the cherry tomatoes in half, dice the cucumber, bell pepper, and red onion, and slice the black olives.
  3. In a large bowl, combine the cooked pasta, tomatoes, cucumber, bell pepper, red onion, and olives.
  4. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine. Refrigerate for at least 1 hour before serving.
