Mediterranean Vegetable Stir Fry

Ingredients:

  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 1 large Onions, sliced
  • 2 medium Bell peppers, sliced
  • 1 large Zucchini, cut into half moon shapes
  • 1 medium Eggplant, cut into cubes
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper
  • 1 cup Feta cheese

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Add garlic and onion, cook until they are soft and fragrant.
  3. 3. Add bell peppers, zucchini, eggplant, and cook until they begin to soften.
  4. 4. Stir in cherry tomatoes, olives, basil, oregano, salt, black pepper, and cook for another 5 minutes till all the vegetables are well cooked but still maintains their crunch.
  5. 5. Before serving, sprinkle with feta cheese.
