
Mediterranean Vegetable Stir Fry

Ingredients:
- 2 tablespoons Olive oil
- 2 cloves Garlic cloves
- 1 large Onions, sliced
- 2 medium Bell peppers, sliced
- 1 large Zucchini, cut into half moon shapes
- 1 medium Eggplant, cut into cubes
- 1 cup Cherry tomatoes
- 1/2 cup Kalamata olives
- 1 teaspoon Dried basil
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
- 1 cup Feta cheese
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat.
- 2. Add garlic and onion, cook until they are soft and fragrant.
- 3. Add bell peppers, zucchini, eggplant, and cook until they begin to soften.
- 4. Stir in cherry tomatoes, olives, basil, oregano, salt, black pepper, and cook for another 5 minutes till all the vegetables are well cooked but still maintains their crunch.
- 5. Before serving, sprinkle with feta cheese.
