Mediterranean Vegetable Scramble

Ingredients:

  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 red bell pepper
  • 2 zucchini
  • 2 ripe tomatoes
  • 8 eggs
  • 0.5 cup feta cheese
  • to garnish parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  2. Add the red bell pepper and zucchini to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Add the tomatoes to the skillet and cook for another 2 minutes, until they begin to break down.
  4. In a separate bowl, whisk the eggs. Add the eggs to the skillet and stir to combine with the vegetables. Cook until the eggs are scrambled and cooked through, about 3 minutes.
  5. Crumble the feta cheese over the top of the eggs and vegetables. Stir slightly to combine, allowing the feta to melt slightly.
  6. Remove from heat and garnish with parsley before serving. Enjoy your Mediterranean Vegetable Scramble!
