
Mediterranean Vegetable Scramble

Ingredients:
- 2 tbsp olive oil
- 2 cloves garlic
- 1 red bell pepper
- 2 zucchini
- 2 ripe tomatoes
- 8 eggs
- 0.5 cup feta cheese
- to garnish parsley
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the red bell pepper and zucchini to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Add the tomatoes to the skillet and cook for another 2 minutes, until they begin to break down.
- In a separate bowl, whisk the eggs. Add the eggs to the skillet and stir to combine with the vegetables. Cook until the eggs are scrambled and cooked through, about 3 minutes.
- Crumble the feta cheese over the top of the eggs and vegetables. Stir slightly to combine, allowing the feta to melt slightly.
