
Mediterranean Vegetable Rice Pilaf

Ingredients:
- 2 tbsp olive oil
- 1 medium, finely chopped onion
- 1 medium, finely chopped bell pepper
- 2 cloves, minced garlic
- 1.5 cups long-grain brown rice
- 3 cups vegetable broth
- 2 medium, chopped tomato
- 1/4 cup, pitted and sliced Kalamata olives
- 1/4 cup, roughly torn fresh basil
- 2 tbsp fresh lemon juice
- to taste salt
- to taste pepper
Instructions:
- Heat the olive oil in a large saucepan on medium heat.
- Add the onion and bell pepper to the pan, sautéing until they begin to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rice to the pan and stir to coat in the oil and vegetables.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the pan and let the rice cook for about 15 minutes until it is soft.
- Stir in the chopped tomatoes, Kalamata olives, fresh basil, and lemon juice. Season with salt and pepper to taste.
- Cover the pan again and let everything cook for another 5 minutes to let the flavors meld together.
- Serve the Vegetable Rice Pilaf warm. Enjoy your healthy Mediterranean dinner!
