Mediterranean Vegetable Rice Pilaf

Ingredients:

  • 2 tbsp olive oil
  • 1 medium, finely chopped onion
  • 1 medium, finely chopped bell pepper
  • 2 cloves, minced garlic
  • 1.5 cups long-grain brown rice
  • 3 cups vegetable broth
  • 2 medium, chopped tomato
  • 1/4 cup, pitted and sliced Kalamata olives
  • 1/4 cup, roughly torn fresh basil
  • 2 tbsp fresh lemon juice
  • to taste salt
  • to taste pepper

Instructions:

  1. Heat the olive oil in a large saucepan on medium heat.
  2. Add the onion and bell pepper to the pan, sautéing until they begin to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the rice to the pan and stir to coat in the oil and vegetables.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Cover the pan and let the rice cook for about 15 minutes until it is soft.
  7. Stir in the chopped tomatoes, Kalamata olives, fresh basil, and lemon juice. Season with salt and pepper to taste.
  8. Cover the pan again and let everything cook for another 5 minutes to let the flavors meld together.
  9. Serve the Vegetable Rice Pilaf warm. Enjoy your healthy Mediterranean dinner!
