Mediterranean Vegetable Casserole

Ingredients:

  • 1 large Eggplant
  • 2 medium Zucchini
  • 2 medium Bell peppers
  • 1 large Onion
  • 5 medium Tomatoes
  • 3 Garlic cloves
  • 1/4 cup Olive oil
  • 1 tsp Dried thyme
  • 200 grams Feta cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the eggplant, zucchini, bell peppers, onion, and tomatoes into medium-sized chunks.
  3. Peel and finely chop the garlic cloves.
  4. In a large baking dish, combine all the chopped vegetables.
  5. Drizzle the olive oil over the vegetables.
  6. Add the garlic, thyme, salt, and pepper, then mix well to ensure all the vegetables are coated.
  7. Bake in the preheated oven for 45 minutes, or until the vegetables are soft and lightly browned.
  8. Crumble the feta cheese over the baked vegetables.
  9. Return the dish to the oven for a further 15 minutes, until the feta is melted and lightly golden.
  10. Serve hot, ideally with some warm, crusty bread on the side.
