Mediterranean Vegetable Casserole

Ingredients:
- 1 large Eggplant
- 2 medium Zucchini
- 2 medium Bell peppers
- 1 large Onion
- 5 medium Tomatoes
- 3 Garlic cloves
- 1/4 cup Olive oil
- 1 tsp Dried thyme
- 200 grams Feta cheese
- to taste Salt and pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the eggplant, zucchini, bell peppers, onion, and tomatoes into medium-sized chunks.
- Peel and finely chop the garlic cloves.
- In a large baking dish, combine all the chopped vegetables.
- Drizzle the olive oil over the vegetables.
- Add the garlic, thyme, salt, and pepper, then mix well to ensure all the vegetables are coated.
- Bake in the preheated oven for 45 minutes, or until the vegetables are soft and lightly browned.
- Crumble the feta cheese over the baked vegetables.
- Return the dish to the oven for a further 15 minutes, until the feta is melted and lightly golden.
- Serve hot, ideally with some warm, crusty bread on the side.
