
Mediterranean Style Seafood Paella

Ingredients:
- 3 tablespoons olive oil
- 4 cloves, minced garlic
- 1 , chopped red bell pepper
- 1 , chopped onion
- 2 , diced tomatoes
- 1/2 teaspoon saffron threads
- 1 1/2 cups short-grain rice
- 4 cups chicken broth
- 1 pound seafood mix
- 1 cup green peas
- 1/4 cup, chopped parsley
- 1 , cut into wedges lemon
Instructions:
- 1. Heat olive oil in a paella pan over medium heat. Add garlic, bell pepper, and onion. Cook until vegetables are softened, about 5 minutes.
- 2. Stir in tomatoes and cook until softened, another 5 minutes.
- 3. Stir in saffron threads until fragrant, about 1 minute.
- 4. Add rice and stir until well-coated in the oil and vegetables. Pour in chicken broth and bring to a simmer.
- 5. Scatter the seafood mix across the rice. Reduce heat to low, cover, and simmer until rice absorbs the liquid and seafood is cooked, about 20-30 minutes.
- 6. Stir in the green peas and cook until they are heated through. Adjust seasoning with salt and pepper if needed.
- 7. Garnish with chopped parsley and serve with lemon wedges on the side for squeezing over the paella.
