Mediterranean Style Seafood Paella

Ingredients:

  • 3 tablespoons olive oil
  • 4 cloves, minced garlic
  • 1 , chopped red bell pepper
  • 1 , chopped onion
  • 2 , diced tomatoes
  • 1/2 teaspoon saffron threads
  • 1 1/2 cups short-grain rice
  • 4 cups chicken broth
  • 1 pound seafood mix
  • 1 cup green peas
  • 1/4 cup, chopped parsley
  • 1 , cut into wedges lemon

Instructions:

  1. 1. Heat olive oil in a paella pan over medium heat. Add garlic, bell pepper, and onion. Cook until vegetables are softened, about 5 minutes.
  2. 2. Stir in tomatoes and cook until softened, another 5 minutes.
  3. 3. Stir in saffron threads until fragrant, about 1 minute.
  4. 4. Add rice and stir until well-coated in the oil and vegetables. Pour in chicken broth and bring to a simmer.
  5. 5. Scatter the seafood mix across the rice. Reduce heat to low, cover, and simmer until rice absorbs the liquid and seafood is cooked, about 20-30 minutes.
  6. 6. Stir in the green peas and cook until they are heated through. Adjust seasoning with salt and pepper if needed.
  7. 7. Garnish with chopped parsley and serve with lemon wedges on the side for squeezing over the paella.
