Mediterranean Style Quick Fish Breakfast

Ingredients:

  • 2 pieces white fish fillets, preferably cod or haddock
  • 1 tablespoon olive oil
  • 2 pieces garlic cloves, finely chopped
  • 2 pieces ripe tomatoes, diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped
  • to taste sea salt
  • to taste freshly ground black pepper
  • 4 pieces lemon wedges, for serving
  • 2 slices fresh bread, for serving

Instructions:

  1. Warm the olive oil in a large frying pan over medium heat.
  2. Add the garlic and fry for a minute until fragrant.
  3. Add the fish fillets and cook for 3-4 minutes on each side, until it's cooked through and flaky. Remove the fish from the pan and set aside.
  4. In the same pan, add the tomatoes and olives. Cook for a few minutes until the tomatoes have softened.
  5. Return the fish to the pan and spoon some of the tomato and olive mixture on top.
  6. Sprinkle the feta cheese and parsley over the fish. Season with sea salt and black pepper to taste.
  7. Serve immediately with lemon wedges and fresh bread.
