
Mediterranean Style Quick Fish Breakfast

Ingredients:
- 2 pieces white fish fillets, preferably cod or haddock
- 1 tablespoon olive oil
- 2 pieces garlic cloves, finely chopped
- 2 pieces ripe tomatoes, diced
- 1/4 cup Kalamata olives, pitted and chopped
- 1/3 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped
- to taste sea salt
- to taste freshly ground black pepper
- 4 pieces lemon wedges, for serving
- 2 slices fresh bread, for serving
Instructions:
- Warm the olive oil in a large frying pan over medium heat.
- Add the garlic and fry for a minute until fragrant.
- Add the fish fillets and cook for 3-4 minutes on each side, until it's cooked through and flaky. Remove the fish from the pan and set aside.
- In the same pan, add the tomatoes and olives. Cook for a few minutes until the tomatoes have softened.
- Return the fish to the pan and spoon some of the tomato and olive mixture on top.
- Sprinkle the feta cheese and parsley over the fish. Season with sea salt and black pepper to taste.
- Serve immediately with lemon wedges and fresh bread.
