Mediterranean Style Pasta

Ingredients:

  • 400 grams Pasta, fusilli or penne
  • 2 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 2 cups Fresh tomatoes, chopped
  • 1 cup Black olives, sliced
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh basil leaves, torn
  • to taste Salt and black pepper

Instructions:

  1. 1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente.
  2. 2. Meanwhile, heat the olive oil in a large skillet over medium heat.
  3. 3. Add the minced garlic to the skillet and sauté until fragrant. Add the chopped tomatoes and sliced olives to the skillet, stirring well.
  4. 4. Drain the pasta, reserving some of the pasta water. Add the cooked pasta to the skillet, stirring well to combine with the tomatoes and olives.
  5. 5. If the pasta seems dry, add a bit of the reserved pasta water. Season with salt and black pepper.
  6. 6. Before serving, sprinkle the pasta with crumbled feta cheese and torn basil leaves.
