Mediterranean Style Grilled Pork Skewers

Ingredients:

  • 2 cups Boneless Pork Chops
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 2 cloves Garlic Cloves
  • handful Fresh Oregano Leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 pieces Bell Peppers
  • 1 piece Red Onion

Instructions:

  1. Cut the pork into 1-inch chunks. Mix the olive oil, lemon juice, crushed garlic cloves, chopped oregano leaves, salt and black pepper in a bowl.
  2. Marinate the pork in this mixture for 15-20 minutes.
  3. In the meantime, cut the bell peppers and red onion into chunks, keep them of the same size as the pork.
  4. On skewers, alternatively thread pork, bell pepper and red onion chunks.
  5. Preheat the grill on medium high. Cook the skewers on the grill, turning occasionally until the pork is well cooked and the vegetables are slightly charred, this will take about 10-15 minutes.
  6. Remove from the grill and rest for a few minutes before serving. Enjoy your Mediterranean Style Grilled Pork Skewers as a healthy snack.
